We believe good food starts with quality ingredients, which is why we offer only the best premium, American-raised meats. No shortcuts, no fillers. Just real food the way it was meant to be.
Railhead Market draws its name from a rich legacy of Texas cattle drives and the expansion of the American West.
In the late 1800s, as cattle herds moved across Texas, small camps formed along the trail to support the construction of the westbound railway. When the railroad reached Callahan County, it crossed the legendary Great Western Cattle Trail, a route that carried millions of cattle from South Texas to northern markets.
Founded in 1880, the town of Baird became known as a “railhead town” because of its key location on the railway line. Cattle would be loaded onto trains in Fort Worth and transported west, often stopping in Baird to graze and rest before continuing their journey to market.
Just like the railhead towns that helped shape the cattle industry, Railhead Market is built on the values of hard work, quality, and authenticity.

Akaushi beef stands apart from all other breeds, offering a melt-in-your-mouth texture and a rich, buttery flavor that’s truly one of a kind.
The high-fat content in Akaushi cattle reduces muscle fiber and collagen, resulting in an incredibly tender bite.
Akaushi beef contains more monounsaturated fat than saturated fat, which the American Heart Association links to lower cholesterol, heart disease prevention, and weight loss.
A high concentration of oleic acid gives Akaushi beef its signature deep, buttery taste, unlike anything else on the American market.
